I've known how to make Italian Panna Cotta for a long while now (I'm getting old, ya know), but when in Sicily, Chef Martina of Signum taught me to make it in a slightly new way — with sweet almonds. What we're making today is sweet almond Panna Cotta — the creamy and almondy (great word choice there, Shaye) dessert that Italian dreams are made of. I don't often lose control when consuming sweets — in fact, it's a point of pride for me that I am often able to say no to the tempting sweets that surround this time of year. But with sweet almond panna cotta? I have no hope. I could (and will) eat this entire thing by myself.
